10lbs Whole potatoes ( for a family of 7.  Adjust the quantity to fit your family size)

Lard, Tallow or saved meat fat

Peel the potato and cut in 4 pieces lengthwise.

Add the in water with vinegar in a big pot. They would stay white.

 

Put some pieces of potato in a baking pan. I use cast iron pans. They cook fast and crisp up well.

 

 

I also use stone baking dish and do multiple batches at a time.

 

Sprinkle salt on them and drizzle few tbsp melted fat on them. Stir to coat and spread the pieces in the pan to have space among them. Bake at 425 degree F for 40 min.

Take the pan out. Turn the pieces and bake for 5 minutes. Take out and flip again and bake for 5 more minutes.

Serve with Fried-Baked Chicken.

Tips: The fat used above came from meat Cooked. I save their fat to use later. It save me from buying frying oil. I only buy extra virgin olive oil and it is not suited for high heat.
