1 cup Milk

1 tsp vinegar

1 ¼ cup cornmeal

1 cup All Purpose Flour

2 tsp baking Soda

Pinch of Salt

½ -1/3 cup sugar

¼ to ½ cup melted fat (saved lard or tallow from cooking meat)  or butter

1 egg

Add vinegar to the milk and let it sit undisturbed. I am using baking soda instead of baking powder as it can contain aluminum. Therefore, it need to introduce some acidity to the mixture for the baking soda to be active.

Melt some save animal fat in a cast iron on the stove to gather about ¼ cup or it

Preheat the oven at 400 degree F.

In a bowl, mix the dry ingredients. Stir to incorporate.

Add the slightly beaten egg.

Add the milk mixture

Add the melted fat.

Use a spatula to stir to incorporate all the ingredients.

Pour in the greased cast iron and bake at 400 degree F for 25 min.

Sometimes I use butter and sometimes saved fat. I keep my fat in the freezer.
