You would remark that I have being cooking a lot of meals with pork sausage lately. It is because I stocked up when they went on sale few months ago and are sitting in my freezer. I would like to cook all my frozen meat this winter before I start using my canned meat. I would like to empty my two chest freezers by spring and clean them. I would like to downsize to one freezer and keep the smallest one for meat I would cane. Pork sausage potato soup is a quick meal to fix for dinner. It is very thick and filling. No cracker is needed but my husband like to eat it with saltine crackers. So the choice is yours.

Pork Sausage Potato Soup

Ingredients:

10 lbs. Potato, peeled, washed and quartered

12 oz. Pork Sauce

1 cup chopped green onion(optional)

2 quarts Bone Broth

Direction:

Brown the sausage. Add the onion

Add the potatoes.

Stir and cook for 5 minutes.

Add the broth.

Salt

Cover and bring to a boil.

Cook until the potatoes are soft.

Stir with a spoon to break some.

It would turn into a tick soup.

Serve.

It is a quick dinner that can be ready within an hour and half. The only thing that takes time is to peel and quarter the potatoes. It takes about 20 min. After that, while the soup is cooking, you can do other chores around the house or doing homework with the kids, or catch up with your partner. This meal feeds 7 people with leftover for lunch. It is very affordable when the ingredients are purchased on sale. For instance, 10 lbs. potato bag cost $1.98 when on sale versus $3.89 its regular price at a grocery store in my area. I purchased the sausage at $0.77 on sale when it is well above $1 at its regular price. I made my own bone broth and canned it for later use.
