The recipe is for a family of 7. Adjust to fit your household number or expect to refrigerate the leftover for later.
10 lbs potatoes
12 oz Pork Sausage
2 cups chopped onion or green onion
chopped Sage or herbs of your choice or freshly ground pepper

In a 8 qt pot, brown the sausage.
Transfer it to a bowl.
Leave the fat in the pot.
Peel the potatoes and wash them.
Put the potatoes in the pot and add the onion.
Salt and add the herbs of your choice.
Add 2 -3 cups of water
Cover and bring to a boil.
Reduce the heat and cook until soft.
Add the cooked sausage.
Stir together and cook for few more minutes to ensure all is cooked.
It is a great way to stretch my dollars and feed my family of 7 including 4 adults and 3 kids.
What is your way of feeding your family on a low budget?
The potatoes were on sale for $0.99 for 5 lbs bag. I purchased 50 lbs and spread them in boxes, 10 lbs per box so that I cook exactly the amount I need it. I tend to gather the boxes from Aldi fresh produce session. They are sturdy boxes and stalk on each other. I grew potatoes this year in my front and back yard garden and on two community garden plots but I didn’t harvested enough for my whole year food supply as I anticipated it. I planted 18.5 lbs of Fingerling potatoes, 50 lbs Katahdin and 10 lbs Red Pontiac. I harvested about one 5 gal bucket of Katahdin and about one 3 gal bucket of the rest combined. I planted them whole and they produce 2 to 4 potatoes by plant.
Any advice on how to improve my harvest next year?
Until then, I just have to shop sale on potatoes at the grocery stores otherwise, I buy them at our local Aldi at about $3.89 for a bag of 10 lbs.

I fed my family of 7 dinner for $2.97. I harvested the onion from my garden. I grow Egyptian onion to eat their top and leave the bottom to regrow. That is a sustainable way of growing my own onion. I have other types of onion including Potato onion but Egyptian onion is my favorite to cook with and Potato onion for fresh eating. I have not bought onion at the grocery store for two now. I also harvested sage from the garden. I don’t buy fresh herb either. I just grow my own. If I can’t grow it then I just cook without or substitute with what I grow.
