Quick Chicken Sauce


Leftover Fried-Baked chicken leg quarter (remove bones and dice)

Kale cleaned and cut (hand full of kale leaves would be en

2 tbsp. Homemade lard, tallow, or Olive oil

¼ cup Chopped onion

3 cup diced tomato


Diced 1 hot pepper

Fresh herbs (Winter savory)

Sauté onion, herbs and hot pepper for few minutes.

Add the chicken. Cook for few minutes. Add Kale.


Cook for few minutes.

Add the diced tomato and salt.

Cook for few minutes.

Serve on cooked rice.


If you have a kitchen garden, you could go out and harvest few leaves of fresh kale.

Any home owner should grow a little garden if he or she can. Today most of the population leave in the city and expect few farmers and industrial farmers to provide our food. I believe anyone that has the ability and the strength, should try to grow some of his own food. I tend to go overboard with my garden but I just don’t want to waste any space.
