I made this on my birthday. I have planned to make cream cheese cake. I didn’t want to spend on store bought cake and I purchased cream cheese on sale. The day before my birthday, our milk expired. I decided to make pudding pie with the milk instead of discarding it since I didn’t have space in my freezer to freeze it. I made  this pudding pie and all my family loved it. The recipe is for a family of 7. I used a rectangular glass baking dish about 14in long. You can use pie dishes and many regular size pies or use a big baking dish and make one big pie as I did. With my family, a pie dish doesn’t go far as my kids love pies. I made a thick crust at the bottom of the dish by using 2 boxes of Graham crackers. I like thick crust with my pie to make it filling. Now if your milk expired, you can make pudding pie or yogurt which I would post later.

Pudding Pie

12 cups Milk

2 cups flour(1 ¾ cup for softer texture)

1 cup sugar

1 Cinnamon stick

2 boxes Graham Cracker

2 sticks (1 cup) Butter

Direction:

Pudding

In a pot, Add the milk, cinnamon stick, flour, and sugar.

Turn the heat to medium. Stir to dissolve the ingredients into the milk. Stir constantly until it starts to boil. Boil for 1 minute. Turn the heat off. If there is lumps in the pudding, strain it but constant stirring during the cooking should prevent lumps. Take the cinnamon stick out.

Crust

Pound the crackers in a mortar with a pestle. Pound few crackers at a time and transfer to a bowl. Repeat the process and pound all of the crackers.

Add softened butter and by hand, mix all together.

Butter the baking pan. You can use a part of the butter to butter the baking pan before using the remaining with the crumbs.

Pour the crumbs in the baking pan and even out. Press down by hand into a firm wall in and around the dish.

You can bake the crust at 300 degree F for 10 min but it is not necessary.

Pour the pudding on the crust.

Bake in the preheated oven at 300 degree F for 30 min.

Take out and let it cool before serving.
