Pesto is a quick sauce to make no cooking involved. Many variety of greens can be used. If the green can be eaten raw, it can be used in pesto.

It doesn’t require many ingredients. It is versatile and can be made using a mortar and pestle.

Ingredients:

Two handful of fresh Sorrel leaves, washed and chopped

Wild Thyme Leaves

1 Jalapeno chopped

Extra Virgin Olive Oil

Salt to Taste

1 Cup Shredded Cheese like Mozzarella

Direction:

Add sorrel and thyme leaves in a mortar and pound with a pestle to grind them.

Add the chili pepper.

Grind to form a crunchy paste.

Add salt and grind.

Add cheese and grind few more times.

Transfer to a bowl and add olive oil.

Stir to well incorporate.

Serve alongside spring roll, pork chop, plain rice, pasta, or more.
