I like to eat cookies but I don’t like them too sweet. I tried different recipes and has to make some changes to reach what I am comfortable with. This recipe below could be improved like for instance reducing the amount of butter.

In this recipe, I used less sugar and no baking soda. I didn’t add baking soda to my recipe as I don’t see the reason to, since there is no acid added to the recipe to activate it.

The mini chocolate chips or the regular size ones can be used. The mini ones scatter more in the dough and can easily be found in each cookie. When using the regular size chocolate chips, few cookies may not have any chocolate chips in them. But it doesn’t bother me. A cast iron baking pan or any baking pan should work. I use a cast iron baking pan or a stone baking dish to bake my cookies.  Also, I don’t like to use power tools if I can help it. Therefore, I didn’t use an electric hand mixer. Using a spoon and my hands, I can make chocolate chips cookies any time of the day or night without alerting everybody in my house including the one taking nap or sleeping.

It saves money to shop sales. In November 2018, butter made with milk went on sale in two grocery stores. One store sold it for $1.77/lb. when the original price was $3.99/lb. I purchased 20 lbs. and paid $35.40. I saved $44.40. the second store sold it for $1.68/lb. instead of $2.99/lb. the regular price. I purchased 10 of them and paid $16.80. I saved $13.10. I stored them in the freezer. It should last me for a year until it goes on sale.

Similarly, chocolate chips went on sale twice in 2018 at which they sold for $0.99/ bag of 12oz. I first purchased 6 bags as that was all I could afford. The second time I purchased 20 bags. That allowed me to make cookies with my kids time to time. They should last me a year as I decrease the amount I use in my baking. For instance, this recipe calls for 1/4 of what a regular recipe would use.

I generally save a little from my food budget every month to stock up during sales. I might write an article on my 2018 stocking up soon. It was similar to my 2017 grocery haul.

Chocolates Chips Cookies

3 sticks of butter softened or a room temperature

1 cup of sugar

3 eggs

3 ⅓ cups all purpose unbleached flour

½ cup chocolate chips

 

Direction:

Preheat the oven at 375 degrees F.

In a mixing bowl, add the butter  and the sugar.

Use a spoon or spatula to break the butter and mix with the sugar.

Add the egg and mix together.

Add one cup of flour and mix using the spoon or spatula.

Add the second cup of flour and mix.

Add the remaining flour.

Scrap the spatula or the spoon.

With clean hand, mix the mixture together until all flour is well incorporated.

Add the chocolate chips.

Mix well.

Wash hands and put two eating spoons in the mixing bowl.

 

Scoop a half spoonful of dough and use the second spoon to drop it on the baking pan.

Leave few inches space between the dough.

Bake at 375 degrees F for 10 minutes or until the bottom of the cookies are brown.

Probably the first batch might take about 15 minutes to bake and the remaining about 10 minutes.

Take the baking dish from the oven.

Use a clean spoon to remove the cookies to a dish and let them cool.

 

Repeat the baking process until all the dough is baked. Make sure to bake on the middle rack in the oven. If more than one rack are used, the cookies on the top rack may not cook at the same time as the one on the lower rack or more time might be needed to bake the cookies.

Because of the low moisture in the cookies, no refrigeration is needed to store them. Let them cool completely and close the dish they are stored in and leave at room temperature. They can be eaten within a week.
