2 lbs. Medium Shrimp, deveined, with tail on
Flour
1 eggs beaten
½ cup milk
Salt
Spice of choice
Direction:
Peel the shrimp.
Save the peels for broth.
Add  salt and spices to the shrimp. Stir.
Add few tbsp. of flour to coat the shrimp.
In a second bowl add the egg and milk. Stir.
In another bowl add 2 cups flour.
Salt the flour.
Take the shrimp one by one and dip in the  egg and in the flour and put in a fourth bowl. Repeat until done.
Heat the fat in a cast iron pot.
Put the shrimp one by one the frying oil to cover the bottom of the pot. Fry on medium heat for 2 min and turn the other side to fry another minute. Remove to a colander.
Repeat the process until all the shrimps are fried. Serve with French fries and your favorite dip.
My family likes ketchup.
I like to serve this on birthdays or holidays as shrimp can be expensive.
