On day 4 of making sourdough starter, the 3 days old sourdough starter rose from 1.5 cups to 2 cups. We stirred it and fed ½ cup with 1 cup all-purpose unbleached flour and ½ cup tap water. Then we stored it on the counter for the next 24 hours.

Day 4: 11-30-22-Observation:

We started making sourdough starter on 11-27-22.

On Day 4, the sourdough starter rose to 2 cups. When we fed the sourdough starter on day 3, it was at 1.5 cups level. On day 4, it rose to 2 cups.

There are bubbles in the sourdough starter. Which means there are organisms creating gazes in the sourdough starter.

What container should I use for sourdough starter?

You can use 1 quart canning wide mouth jar to make sourdough starter. We need 2 jars on hand when feeding sourdough starter. One jar will have the sourdough starter. The other clean jar will be where you will transfer the sourdough starter you want to feed.

You can use any container you have on hand if it can close loosely, to make sourdough starter. The container must have a capacity of at least 4 cups. However, using a wide mouth glass jar, allows you to see the level of the sourdough starter when you fed it, and the level it rose to after 24 hours when you are making your own sourdough starter. When your sourdough starter is rising you will know. When your sourdough starter double in size, you will know as well.

The canning wide mouth jar 1 quart size has measurement on the glass to help you estimate when your sourdough starter started to rise and when it doubles in size. A wide mouth jar allows you to clean the jar easily when your hand can go inside.

What is the ratio of flour to starter?

To ½ cup of sourdough starter, feed it with 1 cup of all-purpose unbleached flour.

What kind of water do you use for sourdough starter?

To feed your sourdough starter, you can use tap water, filtered water, or bottled water.

Do you use warm or cold water for sourdough starter?

To feed your sourdough starter, use room temperature water. The water could be on the cold side if you have not opened your water faucet for hours or on the warm side if you have used your tap water often during the day. Either way will be fine.

Just avoid pouring hot water on your sourdough starter. There are living organisms in your sourdough starter that you are encouraging their grows in your starter and you do not want to burn them. Avoid taking cold water from inside your fridge to feed your sourdough starter. If the water is too cold or too warm for you to wash your hands with, you should not use it to feed your sourdough starter. Cold water won’t destroy your sourdough starter organisms. But hot water might.

How to feed sourdough starter?

To feed sourdough starter, stir the sourdough starter. Scoop ½ cup of sourdough starter and transfer to a clean jar. Add ½ cup of tap water at room temperature to the sourdough starter in the clean jar. Add 1 cup of all-purpose unbleached flour to the mixture. Stir well for about 1 minutes to combine all 3 ingredients. Scrap the sides of the jar.

Having the water at the bottom and the flour on top allows you to stir the mixture well without having flour left at the bottom of the jar.

Should you store your sourdough in a tight lid container?

Close the jar loosely after you stirred the mixture. Store your sourdough starter in a container you can close loosely to allow a minimum of airflow going in the jar or the container.

How to store sourdough starter on counter?

Store the jar of the sourdough starter you just fed on the kitchen counter in the far back so that it is not disturbed during the day. Cover with a cloth towel to keep it away from direct sun light and to prevent flies to go in the jar. Let the sourdough starter stay undisturbed for 24 hours.

Yes, you can make sourdough starter with all-purpose unbleached flour. You can also feed your sourdough starter with unbleached all-purpose flour.

Can you make sourdough starter with any flour?

You can make sourdough starter with all-purpose unbleached flour. Choose one type of flour whole wheat, bleached all-purpose flour, or unbleached all-purpose flour to make your sourdough starter.

Can you feed sourdough starter with any flour?

Yes, you can feed sourdough starter with any wheat flour.

I made my sourdough starter in 2015 with whole wheat flour. I used Kind Athur recipe. I didn’t cook with whole wheat flour. I purchased enough whole wheat flour to make the sourdough starter. After the sourdough starter was done and I could bake with it, I purchased unbleached all-purpose flour to feed it and I used the sourdough discard to bake sourdough pizza and sourdough bread.

In 2020, we couldn’t find all-purpose unbleached flour at the grocery store. I purchased all-purpose bleached flour to fee my sourdough starter and to bake sourdough bread and pizza. That same year I make sourdough starter with all-purpose bleached flour to see if it can be done. It succeeded and we have YouTube videos linked below if you want to use bleached flour to make sourdough starter.

After the new sourdough starter was made, I used the discard to bake and the one to feed, I added it to the existing sourdough starter. From 2020 to early 2022, I used all-purpose bleached flour to feed my sourdough starter and to bake pizza and bread.

In 2022, we were able to find unbleached all-purpose flour at the grocery store and we switched back to all-purpose unbleached flour. I use unbleached all-purpose flour to feed my sourdough starter and to bake sourdough pizza and sourdough bread.

I wanted to see if all-purpose unbleached flour can be used to make sourdough starter and started on 11-27-22 to make my third time sourdough starter. But this time, I am using all-purpose unbleached flour and tap water. And so far, I could tell the sourdough starter is growing organisms that are fermenting the starter and creating gases.

How to use sourdough discard?

When you start making sourdough starter, after you scoop ½ cup of sourdough starter to feed, throw away the remaining sourdough starter discard in the trash. Until the sourdough starter is ready for you to bake with, the sourdough discard should be thrown away. You can add the sourdough discard to your composing bin or your mulch garden. Because the natural organisms we are encouraging the growth in the sourdough starter may not be enough yet in the starter. Therefore, I don’t think it is safe to use flour mixed with water left at room temperature for 24 hours in your cooking.

How to use sourdough starter?

You can use sourdough starter to make sourdough bread and sourdough pizza. You can use some of the sourdough bread to make sourdough croutons.
