The ingredients for this salad vary depending on what I have on hand. I like to make a big batch to serve it as a stand-alone dish.

I have baby zucchini in my garden as well as green beans. Therefore, they were added. They were free, fresh, and grown without pesticide nor chemical fertilizer. It didn’t cost me anything to grow them. I saved my own seeds from my harvest two years ago and replanted them. The only ingredients I purchased were the eggs for $0.72 ($0.48 / dozen), apples for $0.77 ($0.77/lb.), grapes for $0.99, sugar and salt for $0.15 (estimated), Tostadas for $1.98. The salad cost $2.63  all by its self and $4.61 with the tostadas.  That was $4.61 for 7 servings thus $0.66 per serving.

I have being making this salad through out this summer with fresh vegetables from the garden and fruit purchased on sale during the week. We eat greens salad during the growing season and go without in winter.

Ingredients:

Half gallon fresh sorrel

16 Hardboiled eggs

Few Leaves Fresh Dandelion

Few Leaves of Wild Arugula

Handful of baby green beans

3 Apples

1 Quart of Grapes

 

Kefir Dressing

Directions:

Boiled the eggs while rinsing the greens.

Rinse and chop the greens.

Rinse and cube the apples.

Rinse and halve the grapes.

Remove the string of the beans.

Rinse the zucchini and cut in small pieces.

Add everything to a big bowl or a pot.

Drain the eggs and shell. Chop them and add to the bowl.

Add the dressing.

Toss well and salt if necessary.

Serve alone or with tostadas, bread, biscuit, or cornbread.
