This is one person serving. It can be made for school lunch or lunch at work. Avocado was on sale 3 for $1 and I made this salad for my husband’s lunch at work.

Ingredients:

2 Hard Boiled Eggs, Shelled and diced

½ Cup Homemade canned Corn

2 Avocados

2 Tbsp. Homemade Yogurt Dressing

2 French Sub Buns or any sandwich bread

 

Direction:

Transfer a jar of Homemade canned corn to pot and bring to a boil. Boil for about 5 minutes.

Drain and let it cool.

Slice the avocado after removing the skin and core..

 

In a bowl, Add the avocado, corn and eggs.

Drizzle the dressing on top.

 

Serve the avocado salad with the bread.
