Add the oil to a pot. I like to fry in cast iron pan. You can add up to half gallon oil to the pan.
Put the pan on medium heat on the stove.
Get Some of the tortillas and put on a cutting board.
With a chopping knife, cut the tortillas in 4 or 8.
Once the oil is hot or to test the oil, add 1 slice of tortilla in the oil. If it starts to boil around the edges of the tortilla, the oil is hot enough to fry. Add the tortillas pieces in the oil one by one until the top of the oil is covered.
Stir and let it fry until the tortilla is light brown.
Get them out of the oil to a strainer to drain. Add more tortilla pieces to the oil.
Salt the fried tortillas and shake chili flakes on them.
After few batches, transfer the tortilla chips from the colander to a bowl.
Continue the same process until all the tortilla pieces are fried.
Serve the tortilla chips as nachos. You can also serve the spicy chips to eat in front of the television during football season or on movie night.
