The zucchini we used is this soup didn’t cost us any money because we grew it in our garden. The broth is homemade therefore, free. The chicken was purchased at about $0.49/ lb. If the chicken is about 2 Lbs., our soup cost as low as $1.09 including $0.98 for chicken, and $0.11 for salt and chili pepper. I fed my household of 6 for $1.09 or $0.18/serving.

 

2 cups grated Zucchini

1-Quart Homemade Canned Chicken

1-Quart Homemade Chicken Broth

1 Tsp Chilli Flakes

Salt to Taste

1 Cupa of Chopped Sorrel (Spinach can be used)

Directions:

In a 6-quart pot, add the chicken, zucchini, sorrel, broth, pepper flakes, and salt.

Cover the pot with a lid. Bring the soup to a boil on the stove on high heat.

Turn the heat down to medium.

Stir the soup and cover the pot with the lid.

Let the soup boil on low heat for about 20 to 30 minutes.

Turn the heat off and serve the soup hot.

NB: If you don’t have homemade canned chicken and broth, you can use chicken quarters and water. Boil the chicken quarters with all the other ingredients for about 30 minutes or until the chicken is done. Remove the chicken quarters out of the soup. Remove the bones and return the chicken pieces to the soup and simmer for about 10 to 15 minutes. Then serve.
