You can harvest Egyptian walking onion leaves in spring and fall for fresh eating or for cooking.

In the video, we harvested Egyptian onion leaves to make salad to serve with homemade sourdough bread and ham for dinner.

In late summer you can harvest Egyptian walking onion top bulbs or bulbils for fresh eating or cooking or to replant to increase your onion patch in your garden.

In late summer you can also harvest some Egyptian walking onions bulbs from the ground for eating or cooking. However, if you plant to grow a sustainable garden, you can refrain from eating all the mother bulbs and just eat the leaves in spring and fall, some of the top bulbs in summer, and very few of the mother bulbs in summer.

Yes, hard-neck garlic and soft-neck garlic greens or garlic leaves are edible. You can add them to your salad for fresh eating or you can cook with them just like the way you can cook with garlic cloves.

In the video we harvested garlic greens to add to our salad.

Sustainable Gardening Zone 5a

Garden tour 5-8-24
Garden tour 5-8-24

To grow a sustainable garden in our USDA Zone 5a, we grow hard-neck garlic and soft-neck garlic as perennials and just harvest the garlic greens for our eating and cooking.  We let the hard neck garlic go to seed and we harvest the garlic bulbils to scatter in the garden to increase our garlic patch.

The garlic bulbs in the ground break into cloves and each clove grows into a separate garlic bulb. When you grow garlic as perennial, they grow in clumps together as each clove grows into a separate garlic bulb. Most of the bulbs will be small as they grow close to each other.  We grow garlic for their leaves not their bulbs therefore, we are fine with it. You plant it once and it will multiply, and they will keep coming back year after year. Just make sure to plant the variety hardy to your zone.

Harvest garlic leaves in a sustainable way. Peel about 2 -3 bottom leaves from each established plant.

Similarly, harvest 2-3 Egyptian onion leaves from the bottom or outer edge of the plant away from the center to avoid damaging the seed stalk the will grow at some point in spring to support the Egyptian onion bulbils.
